Quick Minestrone Soup

Made this lovely thick soup the other week in our men's kitchen. So I made a pot at home for the weekend.

Quick Minestrone Soup
Serves: 4-6 Preparation time: 15 to 30 minutes
Ingredients
2 onions, chopped
2 large carrots, grated 300 g bacon pieces
1 x 425 g can crushed tomatoes with basil and oregano
4 cups beef stock
1 cup macaroni
1 x 410 g can three or four bean mix, drained
2 or 3 zucchinis (depending on size), grated
2 tablespoons oil
150 g shaved ham (chopped/shredded)
Shaved parmesan cheese

Method
1. Saute onions, carrot and bacon pieces in oil for 5 minutes in a large saucepan.
2. Add remaining ingredients and simmer for 15 to 20 minutes.
3. Season well and serve topped with shaved parmesan cheese and fresh chopped parsley.

Gosh, Hughie, wish it was soup weather here! (ah'm too hoat!) That looks delicious!

Morag - we need to get together and swap houses for the summer - you come here, water my plants and feed my cat and I'll house sit yours, watering and feeding whatever whenever :-) I could dae wae a wee bit hoat - missing the Sri Lankan heat!

You'll need to post pics of your holiday, Meg! Hope the Waverly trip was good. If we ever trade hooses you'll need your handyman's apron and tool belt...we're at the constant fix up, patch up, remodel phase here, talk about living out a suitcase :roll: Currently the living room has saw horses with strips of molding, varnish drying, - that was my pre-breakfast job!
I'm making that minestrone for sure once we get some cooler weather! I think, along with ayrshire tatties with butter and sibies, soup was my mum's favourite! (and she made a really good tattie soup!)

Hughie, I'm thinking of giving this recipe a go this winter but can you tell me what is a can of 3 or 4 bean mix and can it be sourced in the three towns.?

Hi Neil, cans of mixed beans should be available in any supermarket there. The supermarkets here have their own brands in addition to the usual canning vegetable companies. The soup is delicious! //perfect

I might add it's more like a pasta dish than a soup. Have the forks on standby ... it's so delicious!
