Best ever curried sausages. Serves 6-8. Preparation time 15 to 30 minutes.
Bob and I made this at our weekly men's kitchen. Very nice! I'm sure you'll agree.
Ingredients
750 g thin sausages
1 onion, finely chopped
1 Granny Smith apple, finely chopped
2 teaspoons curry powder
1 tablespoon plain flour
2 teaspoons brown sugar
1½ cups beef stock
2 teaspoons mango chutney
2 teaspoons sultanas
1 teaspoon apricot jam
1 tomato, diced
1 tablespoon coconut
1 cup milk
Salt and pepper to taste
Method
1. Gently boil the sausages for approximately 15 minutes, then peel off skin and cut in half.
2. In a frying pan, add a nob of butter and saute onion and apple for 10 minutes.
3. Add curry powder, flour and brown sugar, and brown for 5 minutes.
4. Add beef stock, chutney, sultanas, apricot jam and salt and pepper.
5. Gradually add milk, tomatoes and coconut.
6. Place sausages into curry mixture, simmer gently for 15 minutes, and serve with fresh beans and boiled rice.

I can't quite get the curry and sausage being in the same sentence! I've only ever made curry using chicken, vegetables, shellfish or beef. Don't most curry eaters abstain from pork? Even so if it was beef sausage it still seems amiss, but, hey, if it tastes good? - I'm in!

Next week we are going to make that dish but using sweet and sour rather than curry.

* 1 pound turkey kielbasa, cut into 3/4-inch thick slices
* 2 tart apples, cut into 1/2-inch pieces
* 3/4 cup (about 4 1/2 ozs) pitted dried plums, cut into 1/2-inch pieces
* 3 tablespoons raspberry vinegar
* 1 tablespoon brown sugar
Preparation
In large skillet, heat oil over medium heat.
Add onion; cook 4 to 6 minutes"or until soft, stirring occasionally.
Add kielbasa, apples and dried plums.
Cover; cook 4 to 6 minutes or until apples are almost tender, stirring occasionally.
Stir in vinegar and brown sugar; cook an additional 5 minutes.
