ham and egg combo

Ham and egg comb.
sauce
1/4 cup all purpose flour
1/2 cup mayonnaise
2cups milk
pinch salt
heat stirring constantly gradually adding 5-6 slices american (that sliced processed stuff) cheese, 1 chopped onion,about 1 1/2 cups cubed (cooked) ham, 1 jar pimiento, optional, you could also use diced red bell pepper, and 6 chopped in large pieces, 8ths? boiled eggs. serve over toasted muffins / crumpets or just toast!

Morag's hangover cure???? Sounds scrummy - will def. try this - all purpose flour doesn't have any rising agent Morag, does it?

I usually just stick to the basics, Meg, maybe a wee bit more cheese than called for (this family loves cheese:roll:) but I think you could adapt it to most anything, smoked salmon or any smoked fish would give of a 'hammy' flavour,instead of ham, e.g, now with vegetarians to consider, I make the recipe but save the addition of the ham 'till after I've separated enough for them in a separate pot then add the ham and let it warm through and let the flavours merge. A sprinkle of diced chives or sibies for colour maybe? It's been a family favourite for years.
Incidentally, when making Eggs Benedict, I use smoked salmon for the veggies, had it in New York that way and OMG, it was mouth wateringly delicious...drool :good:

May I add, thank God they are not vegan,....yet :shock:

Just remembered we used to used the dyed boiled eggs at Easter for this as a brunch and it was weird, as the dye had got through the shell, to be eating multi-coloured bits of egg!
