Myself and the misses are making the point of getting out more-we have discovered this wee French place just down the road and the rib eye steak is delicious, she enjoys it with the old favourite peppercorn sauce -i have it with either

beef dripping Merlot gravy or Bordelaise gravy with bone marrow.
For me that is perfect Gravy...

i have always struggled skim the fat add flour....

No need to add flour. Just skim the fat, scrape everything else into another pot, add some broth or water, simmer, then drain it all through cheese cloth...voila. The gravy doesn't have to be thick...just flavourful!
