I need some recipes
HI I bake for the elderly once a week and have been saying about scottish shortbread from the Lofty peak book 1946 does anyone know this recipe? also I seem to remember Empire biscuits or was I dreaming. Finally how on earth do I make a Bridie. They think I'm talking gibberish here in devon but I seem to remeber those things. Thanks

Tried to post earlier but my pc froze up..again
I have a Lofty Peak book not as early as 1946 but the recipes are probably the same. There are several shortbread recipes. Here's one for 'Scotch Shortbread':
1 lb Lofty Peak plain flour
8 oz butter
4 oz caster sugar
1 egg
Prepare a moderate oven (400F. - Regulo 6)
Sieve the flour and thoroughly amalgamate the butter and sugar (do not cream)
Add the egg and thoroughly incorporate
Add the flour then rub in to a crumbly consistency
Turn out on to a floured board and rub together lightly until a smooth paste is formed
Form into two rounds, roll out and decorate the edges either by hand or shortbread block
Place on a greaseproof papered baking try, prick well with a fork and bake near middle oven for approximately40-50 minutes
Empire biscuits
8 oz Lofty Peak plain flour
4 oz butter or margarine
3 oz caster sugar
1 small egg
Glace icing
Jam
(method- much the same as above)
roll out thinly and cut into small rounds
Place on baking trays and bake near middle oven 15 - 20 mins
When cool,sandwich two together with jam and ice with glace icing.
If desired, a piece of cherry can be placed in the centre of each.

Forfar bridies from Allrecipes.com
Original recipe makes 6 bridies
12 ounces ground lamb
1 onion, chopped
2 tablespoons beef broth
1 teaspoon Worcestershire sauce
1/4 teaspoon salt, or to taste
1/4 teaspoon ground black pepper, or to taste
1 recipe pastry for double-crust pie
1 egg white, lightly beaten
Directions
Preheat oven to 350 degrees F (175 degrees C).
In a large heavy skillet over medium heat, cook lamb until evenly brown; drain excess fat. Remove from heat, and stir in onion, beef broth and Worcestershire sauce. Season with salt and pepper.
On a lightly floured surface, roll pastry out to 1/8 inch thickness. Cut into 6 inch rounds. Place approximately 1/2 cup filling on one half of each. Fold the pastry over the filling, and crimp edges to seal. Brush lightly with beaten egg white, and cut three slits in the top to allow steam to escape. Place on baking sheet.
Bake in preheated oven for 30 to 35 minutes, or until golden brown.

Have a look here. Ive used a couple of recipes from this website.
