soda bread
Desperately seeking an authentic, tried and true soda bread recipe. Not an Irish one or a Googled one, rather, one that your Scottish grannie used to bake.
thanks in advance.
pee ess - I need it yesterday.

Re: soda bread
Och, Catherine, just found out she uses the Irish / American recipe, just leaves out the raisins and caraway seed
Anyway here's that recipe:
1 2/3 cups all purpose flowr
2 Tbsps sugar (or 5 if you are making tea loaf)45 - 50 mins for loaf pan
1 tsp baking powder
!/2 tsp baking soda
1/2 tsp salt
2/3 cup buttermilk (or 1 cup for tea loaf)
4 Tbsp melted unsalted butter
Mix together just 'till dry ingredients are moistened. For the tea bread scrape it into a loaf pan otherwise onto a baking sheet in a 5 - 6 " mound. Slash top with a large 'X' and cook at 375 for 25 - 30 mins for sheet, 350 for 45 -50 mins for loaf pan.
The alternative would be, I think, girdle scone recipe:
1 1lb flour
1tsp salt
1 tsp bicarb of soda
2tsps cream of tartar
milk to mix
sift dry ingredients and mix into a soft dough with milk. Handle as little as possible turn onto floured board, roll out , cut in triangles and cook on a moderately hot girdle. Alternatively, put in cake tin and cook 45 mins (I'm guessing 350 - 375 it doesn't say in the recipe but similar ones have that range. )

Re: soda bread
Catherine, if I can find my "Maw Broon's Cook Book" I will post the recipe.
I don't think we can get more traditional than that.
Now, to go and have a search.

Your right, Morag. But doesn't it annoy you that the thing you are looking for is always in the last place you look, and it is the most logical place for it to be.

Thanks anyway for trying, Morag and Netta.
I guess I'm going to have to start delving through unpacked boxes for my recipe folder.

Re: soda bread
Catherine try this one,
1& 1/2 cups buttermilk .
1/2 cup rolled oats (divided) .
1 cup bread flour or unbleached flour .
3 tbsps butter, melted .
1/2 tsp salt .
melted butter, for top of hot loaf .
2 cups whole wheat flour .
1 tsp baking soda .
1 tsp baking powder
Directions
1 In a large mixing bowl, bread flour, mix whole wheat flour, & 1/4 cup of the rolled oats.
2 Blend in the baking powder, soda, salt, & butter.
3 Make a hole in the center of the mixture & add the buttermilk.
4 Stir until stiff dough forms.
5 Sprinkle top remaining 1/4 cup oats on bread board.
6 Turn dough out onto board & knead for just 1 min, shaping it as you go into a perfect round loaf.
7 There should be a rather thick coating of the extra oats on the outside of the loaf.
8 Cover up baking sheet with parchment paper or lightly grease it.
9 Place loaf seam side down on top of baking sheet.
10 With sharp knife, make a cross slash in the top of the loaf about 1/2 inch deep.
11 Preheat oven to 375°F Bake for 35 to 40 mins or until loaf sounds hollow when tapped.
12 Transfer to rack & brush generously with melted butter.
13 For good slicing, cool for at least 4 hrs.
Enjoy!!
