Just a couple if anyone interested:-

Simple fruit cake:-

2 cups mixed dried fruit
2 cups Orange juice
2 cups wholemeal self-raising flour

soak the fruit in the OJ overnight in the fridge
preheat oven to 180C/350F
sift the flour into the fruit/juice and mix
spread into a greased (I use oil spray) square cake tin
bake for around 30-40 mins (check with skewer/straw often after 30 mins.)
Ovens are all different. This receipe is So simple yummy and cheap.........

................................................

Lemonade Scones:-

2 cups of Self Raising flour (sifted) (bit extra if you think the consistency bit wet) :)
2/3rds cup cold lemonade
2/3rds cup of thickened cream (35%fat)

Preheat oven to 225 deg (around 205 if fan forced)
mix gently and handle gently as rough hands can cause toughness;
line scone tray with grease paper and place the cut out rounds on tray and cook
for around 12 - 15 minutes.
Really yum and again cheap and So easy.

Spaghetti Bolognese (mild - Aussie style)
...........
1lb. best quality minced beef
A large chopped onion (I use a cup frozen chopped) for easy peasy....
Large can best quality tomato soup
...........
Fry beef (tiny bit of olive oil) with the onion and add can of soup - cook for however long you want maybe 1/2 hr. or longer and serve over spaghetti (you cook el dente)
...............
Cheap, and yummy.

Hi Phyl :D
Nice ones! I love "quick, cheap and yummy"

I often make your version of Spaghetti Bolognese when I come home from work, only, instead of tomato soup I prefer to use a tin of crushed tomatoes(the low salt variety)
Keep 'em coming, hen. You're a breath of fresh air and a welcome addition to oor wee group.. :D :D :D
Be kind. Everyone you meet is fighting a hard battle.

Thank you for your kind words Catherine Belle :D

I will make your version of my quick easy peasy Spag. Bol. this week. The can of tomatoes sounds good also, and extra nutrition. We are a bit sooky maybe  but we are not all that fond of the strong taste of tomato paste (much to the chagrin of our Italian friends) :D
I think your site is just lovely now all I have to do is try and have a bit of decorum and sit back and not talk too much over our cuppas. just a tad at least, mine tinket.
All the best.

Quick & Easy Cheesecake
Sorry this one is just over the limit of 3..................

Ingredients
Two 8-ounce packages cream cheese, softened
1/2 cup sugar
1/2 teaspoon vanilla (or juice of a lemon and maybe a bit more sugar - but not too much mind)
2 eggs
Mix all ingredients together. Pour into graham cracker crust or any crust- pastry or biscuit. Bake at 350 degrees for 40 minutes. Cool, then refrigerate

Amazingly easy and delicious (not eaten all for just one person at once is not too fattening and good for you) sorry I am a bit of a health nut (not that I am unbelievabley healthy) so go figure

Hello Phyl

I like nice and easy yummy recipe all you have posted looks great thank you, one thing though is the measures when you say cup I dont think you mean a cup used for a tea cup, do you mean a small measure cup is that right, well if so how do I convert that to U.K measures.

Thank you Isobel. I do mean a teacup we have our tea from (but in reality we use HUGE mugs to drink our tea from ) lol but a teacup dainty folk use a saucer with, is about right but it really does not matter what size you use as long as the same measuring cup for all ingredients even a jug if we want to make heaps :)

I like easy nowadays :)
all the best Phyl.

Il'l have a wee bit of blackberry jam and cream on mine please Isobel and a cup of tea - a big mug if you have one please milk 1/2 teaspoon of sugar just to cut the bitter taste and not too strong but not too weak.
As they say at The Pancake Parlour l o v e l y.......................
Isobel I use Hermesetta instead of sugar in all our cooking. I know artificial sweetener is supposed to be SO bad but then again so is white sugar as they say pure white and deadly also. We have been using artificial sweetner for near all our married life of 34 years and it does not seem to be killing us :) Where any recipe says sugar I use it but cannot make anything merangue as you need the bulk of the sugar.
