What does the dried fruit consist of? I've made it a few times with raisins and sultanas, but would like to make the "real thing" for once.

Hi Meg,
As far as I know the mixed dried fruit I buy from the supermarket contains : Sultanas, raisins, currants, citrus peel and cherries. Lately instead of mangoes I've been using an equivalent size can of pineapple.

OK - my "dried fruit" has everything apart from cherries, so will add some. Going to make it for my "new year" bun. Watch this space .....

Hughie,

It doesn't say in the recipe for your Mango Fruit Cake, but do you mash up the Mango's or leave them whole?

Never mind, Hughie, there's aye a first stuff up. Mine was my first attempt at pumpkin pie, made from a real scooped oot pumpkin, it was perfect, fit tae be photied and put in a cookbook..except I forgot the sugar! Ah weel, oor Irish setter loved it!

Another stuff-up. Put the oven to grill instead of bake - think I switched it to bake just in time before the top toasted. :roll:
