Mango Fruit cake

This is a beautiful fruit cake. I've been using the recipe for a few years now and make it about every ten days or so. Try it

Still making this fruitcake every 10 days or so. There is no sugar in it and you can get the tin of mangoes in their juice with no added sugar. This would probably be ideal for anyone who is a diabetic or someone on a diet.

Last week when my husband was out doing the shopping
I decided to make him your mango cake.

I carefully copied the recipe, lined the greased pan with parchment paper and started to assemble the ingredients. Oh, Oh. the tin of mangos weighed 300and something not 425gm. Not to worry, I only added 400gm. of dried fruit instead of 500 to compensate, and set the pan to boil and then simmer.

Measured out the flour, all-purpose, not self-raising, so added a tsp. of baking powder with the baking soda. Looked for eggs, then remembered that was the purpose of the shopping trip! My vegetarian daughter had given me some "egg replacer" so I mixed up 2 "eggs" and added them with the flour to the cooled mixture as instructed.

When baked the cake looked great and when cut appeared and tasted like a cross between a clootie dumpling, the inside of a black bun, or a rich Xmas pudding. I meant to take a pic of it to check it out with you but it was scoffed in no time. Can you take a pic of your next cake? Margaret

Well Margaret it just so happens that I made one the other day. So out comes the camera and walla!

I sometimes use crushed pineapple instead of mangos for a change. You are right about the richness I like it with custard.

Thanks, Hugh. My version was pretty dark and now I know why. My daughter informed me that "mixed dried fruit" did not mean just currants and raisins. I can see from the pic what I should have used (if I'd had it!).

It was pretty good, anyway, but next time I'll check for ingredients before I start. Margaret

Well Catherine it wiz jist like clootie dumplin sans the thruppenny bits, a must huv done somethin wrang, bit a ate oanyways. :cry: :mrgreen:

I still make a Mango Fruit Cake about once every six weeks. My wife went to a woman's night the other week - one of those lingerie thingies which I wasn't allowed to go to. :cray: Onyway, as it was a "bring a plate" doo, a woman turned up with a mango fruit cake. You guessed it, we'd given her the recipe three years ago.
