Recipe Wanted

Hi all
Lately, I have been recollecting one of my favourite meals; fish in milk, cooked by my grannie in the 1950s. I recall it was white fish (variety unknown), poached in milk with a dob of butter and black pepper.

I would be extremely grateful if someone were able to supply the recipe from that era.

I'll have a look in ma cookbooks, but seems it would be easy enough! Haddock, probably, milk, butter, seasonings, salt, pepper...experiment!

Experiment, ME? It takes me all my time to make burnt toast 'n cold baked beans; that's the absolute limit of my culinary expertise :lol: .

That'll be right, Jim. My faither was from Saltcoats too - I got to love school dinners. :lol:

Sounds like a skink.
I like Nick Nairn's Cullen Skink version with unsmoked haddock, and with some cream added at the end.
Let me know and I'll summarise.

My Dad was a good cook Hughie. We loved his Irish Stews & Steak and Kidney pies, they were simply delicious. Mind you, he was a butcher!

This was how my Grannie made it:
Season fillets of cod or other white fish with salt and pepper. Place a knob of butter in a saucepan and let it melt - not sizzle. Add the fish and cover with milk. Simmer gently for about 6 minutes.
