Bobby and I made this cheesecake in our men's kitchen today - lovely.

Unsure if Cherry Ripes are now available in the UK. My SIL takes them back from Oz as she's a friend who spent some time here and craved for them. http://cadburycomau.ozstaging.com/Produ ... e-Bar.aspx" onclick="window.open(this.href);return false;

CHERRY RIPE Cheesecake
Serves 10 Preparation time: 25 minutes
1 1/4 cup chocolate biscuit crumbs
80g butter, melted
500g PHILADELPHIA Block Cream Cheese, softened
1/4 cup caster sugar
2 teaspoons gelatine dissolved in 1/4 cup boiling water
200g CADBURY Milk Baking Chocolate, melted
2 x 52g CHERRY RIPE Chocolate Bars, roughly chopped
1 cup cream, softly whipped
Extra CHERRY RIPE Chocolate Bars, for decoration (optional)

Combine the biscuit crumbs and butter then press into the base of a greased 20cm springform pan. Chill until firm.

Beat the PHILLY Cream Cheese and sugar with an electric mixer until smooth. Add the gelatine and chocolate and mix until smooth, then fold through the CHERRY RIPE bars and whipped cream.

Pour the mixture over the prepared base. Chill for 2 hours or until set. Decorate with extra CHERRY RIPE bar pieces if desired, prior to slicing.

tasted really good. Think you could substitute Crunchy for Cherry Ripe if that isn't available.
